How to Make Mint Wafer Cookies

Mint wafer cookies are so delicious they should be listed as a sin. The thin chocolate mint wafer wrapped in cookie dough is irresistible.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 3 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup butter, softened
  • 1 cup granulated sugar
  • 1/2 cup firmly packed brown sugar
  • 2 eggs
  • 2 tbsp water
  • 1 tsp vanilla extract
  • package of chocolate mint wafers, like the kind you find on a hotel room pillow
  1. Step 1

    Sift together flour, baking soda, and salt. Set aside.

  2. Step 2

    In large bowl, cream butter, sugar, and brown sugar. Blend in eggs, water, and vanilla.

  3. Step 3

    Mix in dry ingredients. Cover and refrigerate for at least 2 hours.

  4. Step 4

    To make cookies, unwrap chocolate mint wafers. Enclose each wafer in about a tablespoon of chilled cookie dough.

  5. Step 5

    Place cookies 2 inches apart on greased cookie sheet. Bake at 375 degrees F for about 10 to 12 minutes.
