1/2 c. fruit per serving: berries such as blueberries, strawberries, blackberries or peaches, apples, pears, even canned mandarin oranges are all great choices.
1-2 TBS Chunky Peanut or Almond Butter, depending on your calorie needs.
Lite, no-trans fat margerine (optional)
Splenda sweetener.
Nonfat Cottage cheese- 1/2 c. per serving
Step1
Gather your ingredients, just as any good recipe. Now, measure 1/3 c. Old-Fashioned Oats per serving (or 1/2 c. for more calorie needs) and add twice as much water as you add oats.
Step2
Wash your fruit- try everything from apples, to bananas, mangos, grapes, blueberries, strawberries, coconut and pineapple, and so on. Measure 1/2 cup of fruit for each serving.
Step3
Add the fruit and the cinnamon, if you want spices. Microwave for about 1 1/2 mins, depending on the strength of microwave. Now for the peanut butter (or almond butter) add a TBS or two to the mix- if you use one, and stick to Splenda as your sweetener, the whole meal becomes about 300 calories and it is very filling!
Step4
Next you add 1/2 c. of Non-fat Cottage Cheese, and microwave until warm- usually about another half a minute. Now its done and you just sweeten w/ the Splenda to taste (Try 2, or 3 packets-that seems to work well). Obviously you may need less or more Splenda depending on your own tastes. Actually, you can use the blue sweeteners (Nutrasweet) for this too. Put a tiny bit ( 1 or 2 tsp) of Lite Margarine on the top, maybe a little milk, and enjoy!!!
Tips & Warnings
Cinnamon always seems to add to the flavor, so I add it every morning.
Nutmeg and ginger are other good choices.
Cardamom is good-especially if you're using berries, but it's best to buy cardamom in its pods and crush it yourself to get the best flavor.
Experiment w/ different HEALTHFUL fat sources (like cashew butter, walnuts, almonds, and hazelnuts and different fruits- I've used canned lite pineapple w/ a few sprinkles of coconut and it was really tasty.
