Wrapped Sandwiches To Go
Ingredients;
Large tortillas, flour
Fillings (you choose)
rice, beans, and cheese
crumbled veggie burger
hummus, grated onion, grated carrots, spinach leaf
cooked mashed potatoes, seasoned
refried beans and grated cheese
Top whichever filling you choose with your choice of:
avocado slices, chopped lettuce or cabbage, sliced green or black olives, sprouts, sliced tomatoes, sliced onions or chopped green onions.
Wrap tightly, roll it up like a rug, wrap in saran wrap, and take with you to work for lunch.
You probably already have a lunch container that keeps your lunch cool, but if you don't, purchase one.
Wrap can be eaten cold or heated in your work lunch room microwave.
Step2
Follow the above wrap lunch idea, except wrap your food in a large lettuce leaf instead of a large flour tortilla. This sounds strange, but they are really good. These are better eaten cold though as lettuce doesn't do well heated up in a microwave.
Step3
Make your own "fruit plate" for a nice change. Slice various fruits and put in a plastic cooler/container and bring to work, or bring the washed fruits from home, along with a kitchen knife, and slice and dice your fruit at work. Choose from fruits that are on sale this month, or are inexpensive, and if you like add a slice of cheddar cheese to your lunch fruit plate.
Step4
Make a super salad. This works especially well if you have a garden, but find a cheap source for vegetables and you're still saving money. Just wash, chop, dice, slice, peel and put your vegetables together, place in a lunch container and you're set. Don't forget dressing and salt and pepper. If you're feeling festive, bring a hard boiled egg, some sliced chicken slices, or whatever is on sale.
Step5
Fast for lunch sometimes, (maybe once a month?), and use the money you save to help feed the hungry, or add it to your savings.
Step6
Make your own soup and bring it to work in a plastic container you can heat up in the microwave. You are limited here only by your imagination. Check cook books to find some good soup recipes. Good lunch ideas are potato soup, and vegetable soups. Note: make a big batch and freeze some of them for lunches later on in the month. Be sure to label the container so you know what you're eating.
