How to Make Cherry Topping using Stevia

Stevia is a natural extract that can replace most sugars and sugar substitutes, however using it cooking requires a bit of experimentation. I am going to do a recipe that I have tested with stevia for those who wish to try it.

Difficulty: Easy
Instructions

Things You'll Need:

  • 1/4 stevia
  • 1 cup fresh bing cherries pitted
  • 1/2 cup purified water
  • tart shell or ice cream
  1. Step 1

    In a small sauce pan dissolve the Stevia in the purified water. Reduce until it begins to thicken slightly

  2. Step 2

    Add the bing cherries to the mix and let them simmer for 15 to 20 minutes. Or until the cherries begin to soften enough to lose their shape.

  3. Step 3

    Either put the cherries mix in a tart shell and bake, or chill and use to top your favorite Ice cream.

Tips & Warnings
  • If you find that this recipe is too sweet or not sweet enough, experiment with more or less Stevia.
  • Do NOT let the mixture boil, this will tend to break down the Stevia and reduce it's nutritional value
  • Be very careful about using Stevia as a diabetic, make sure it is approved by your doctor, it should not be a problem but every diabetic reacts to new things in a different way.
