Things You'll Need:
- 1 head of iceberg lettuce, cored and chopped
- 1 red onion (optional)
- 1 small can Garbanzo beans (chick peas), drained
- 2 ripe tomatoes, sliced into wedges
- 1 cucumber peeled and sliced
- 1 red, yellow, or orange bell pepper (or all three, if you like), seeded and sliced into strips
- 1 jar olives of choice, drained
- 1 chunk reduced-fat feta cheese, crumbled
- bacon bits (optional)
- anchovies (optional)
- your favorite dressing
- reduced fat croutons (optional)

Step 1
Toss together all ingredients except tomatoes, bacon bits (if using), anchovies, dressing, and croutons.

Toss in tomatoes when ready to serve so they don't make the salad soggy.

Top with your choice of bacon bits, anchovies, dressing, and croutons as desired.
