How to Make a Berg Salad

This is a delicious healthy salad using iceberg lettuce.

Difficulty: Easy
Instructions

Things You'll Need:

  • 1 head of iceberg lettuce, cored and chopped
  • 1 red onion (optional)
  • 1 small can Garbanzo beans (chick peas), drained
  • 2 ripe tomatoes, sliced into wedges
  • 1 cucumber peeled and sliced
  • 1 red, yellow, or orange bell pepper (or all three, if you like), seeded and sliced into strips
  • 1 jar olives of choice, drained
  • 1 chunk reduced-fat feta cheese, crumbled
  • bacon bits (optional)
  • anchovies (optional)
  • your favorite dressing
  • reduced fat croutons (optional)
  1. Step 1

    Toss together all ingredients except tomatoes, bacon bits (if using), anchovies, dressing, and croutons.

  2. Step 2

    Toss in tomatoes when ready to serve so they don't make the salad soggy.

  3. Step 3

    Top with your choice of bacon bits, anchovies, dressing, and croutons as desired.

Tips & Warnings
  • Add some slices of turkey pepperoni to spice it up a bit!
  • Substitue cherry or grape tomatoes for sliced tomatoes; slice in half and add to salad.
  • Serve as a meal or along side of your favorite main course!
  • Lowfat croutons are tasty and widely available.
  • If you are under 12, have an adult help you with slicing.
