How to Make Skillet Corn Fritters

Summer is almost here, and that means fresh corn on the cob. This recipe for corn fritters is perfect for frying on a heavy skillet.

Instructions

Things You'll Need:

  • 12 ears of corn, raw
  • 4 eggs, separated
  • 1 tbsp flour
  • 2 tsp sugar
  • 1/2 tsp salt
  • 2 tbsp butter, melted
  1. Step 1

    Scrape the corn off 12 ears of corn. In bowl, beat 4 egg yolks. Beat in flour, sugar, and salt. Add corn and melted butter.

  2. Step 2

    Beat 4 egg whites until stiff. Fold into corn mixture.

  3. Step 3

    Melt some butter on heavy skillet until well coated. On medium heat, drop batter by spoonfuls onto skillet, like making pancakes. Brown both sides. Serve hot.

Tips & Warnings
  • You can also fry fritters with cooking oil or lard, but frying them in butter adds more flavor.
