Oatmeal is a nutritious, stick-to-your-ribs breakfast, but if you sometimes get tired of that old favorite, dress it up by turning it into honey nut oatmeal with peaches. It can be easily prepared in the microwave and the result is a deliciously fruity concoction.

Difficulty: Moderate
Instructions

Things You'll Need:

  • Old-fashioned or quick oatmeal
  • Water
  • Canned peaches in juice
  • Chopped walnuts
  • Cinnamon
  • Pure vanilla extract
  • Honey
  1. Step 1

Cut the peaches into small pieces.

  2. Step 2

Place the oats, water, peaches and peach juice in a microwave safe bowl.

  3. Step 3

Microwave the mixture for 2 minutes, then stir the mixture, then microwave it for an additional 2 minutes. Stir again.

  4. Step 4

Continue to cook the mixture at 1 minute intervals, stirring after each minute, until the oatmeal is cooked.

  5. Step 5

Stir in the vanilla extract, walnuts, cinnamon and honey.

  6. Step 6

Serve the honey nut oatmeal with peaches hot.

Tips & Warnings
  • If you have a powerful microwave oven, reduce each cooking interval by 30 seconds.
  • Chopped pecans can easily be substituted for walnuts.
  • If you like a creamier flavor, stir in a spoonful of powdered milk, or use low-fat powdered milk if you prefer a low-fat breakfast.
  • If it's peach season, fresh peaches are delicious in honey nut oatmeal with peaches. Just add a bit of water to replace the juice.
  • Change the flavor of honey nut oatmeal with peaches slightly by substituting butterscotch extract in place of vanilla extract.
