How to Make Sweet Coconut Summer Salad

Things You'll Need
- Sweetened condensed milk
- Bananas, peeled and sliced
- Coconut milk
- Freshly squeezed lemon juice
- Cherry tomatoes
- Pineapple, cored, peeled and cut into small chunks
- Mango, peeled and sliced
- Avocado, sliced
- Papaya, peeled and sliced
- Salted peanuts, slightly crushed

Place the sweetened condensed milk and coconut milk in a small saucepan and heat it over low heat until it simmers. Simmer the mixture for about 15 minutes, and set it aside for a few minutes to cool.

Put the sliced bananas in a small bowl and toss them with the freshly squeezed lemon juice. After the bananas are coated, pour off the excess lemon juice.

Arrange the remaining fruit and the cherry tomatoes in layers in clear wine glasses, arranging them so they look colorful and lovely.

Sprinkle crushed peanuts over each serving.

Serve the coconut milk mixture to the side so it can be drizzled over the fruit salad, as desired.

Tips & Warnings
If you don't have fresh pineapple, canned pineapple chunks won't be quite as good, but are an acceptable substitute.
Some slices of fresh strawberries on top of the sweet coconut summer salad make a lovely and delicious garnish.
