How to Make Sweet Coconut Summer Salad

Sweet summer salad isn't only delicious, but it presents beautifully. With a definite tropical flavor, an assortment of colorful fresh fruits and a creamy coconut topping,this makes for a healthy and delectable salad for a hot day.

Instructions

Things You'll Need:

  • Sweetened condensed milk
  • Bananas, peeled and sliced
  • Coconut milk
  • Freshly squeezed lemon juice
  • Cherry tomatoes
  • Pineapple, cored, peeled and cut into small chunks
  • Mango, peeled and sliced
  • Avocado, sliced
  • Papaya, peeled and sliced
  • Salted peanuts, slightly crushed
  1. Step 1

    Place the sweetened condensed milk and coconut milk in a small saucepan and heat it over low heat until it simmers. Simmer the mixture for about 15 minutes, and set it aside for a few minutes to cool.

  2. Step 2

    Put the sliced bananas in a small bowl and toss them with the freshly squeezed lemon juice. After the bananas are coated, pour off the excess lemon juice.

  3. Step 3

    Arrange the remaining fruit and the cherry tomatoes in layers in clear wine glasses, arranging them so they look colorful and lovely.

  4. Step 4

    Sprinkle crushed peanuts over each serving.

  5. Step 5

    Serve the coconut milk mixture to the side so it can be drizzled over the fruit salad, as desired.

Tips & Warnings
  • If you don't have fresh pineapple, canned pineapple chunks won't be quite as good, but are an acceptable substitute.
  • Some slices of fresh strawberries on top of the sweet coconut summer salad make a lovely and delicious garnish.
