Things You'll Need:
- Pastry brush
- Egg whites
- Plastic wrap or aluminum foil

Step 1
Separate the egg white from the yolk. If you have an egg separator, simply crack the egg and open it over the separator. If you don't have one of these tools, crack the egg in half and open it while holding the egg vertically. The yolk will stay in one half of the shell while the white falls into the bowl.

Step 2
Position the egg rolls. You want to place all of your egg rolls so the seam is facing up. This is the side that will be sealed.

Dip a pastry brush into the whisked egg and brush the seams of the egg rolls to seal them.

Seal the ends. After you have brushed the egg white onto the seam, you'll want to brush a little more onto both ends of the egg roll. Doing this helps to ensure that no filling falls out when you fry them up.
