How to Seal Thai Egg Rolls

When preparing Thai egg rolls you need to make sure that you seal them properly before you begin frying them. If you fail to seal them completely, they will fall apart during the cooking process. Here are tips on how to seal Thai egg rolls.

Things You'll Need:

  • Pastry brush
  • Egg whites
  • Plastic wrap or aluminum foil
  1. Step 1

    Separate the egg white from the yolk. If you have an egg separator, simply crack the egg and open it over the separator. If you don't have one of these tools, crack the egg in half and open it while holding the egg vertically. The yolk will stay in one half of the shell while the white falls into the bowl.

  2. Step 2

    Position the egg rolls. You want to place all of your egg rolls so the seam is facing up. This is the side that will be sealed.

  3. Step 3

    Dip a pastry brush into the whisked egg and brush the seams of the egg rolls to seal them.

  4. Step 4

    Seal the ends. After you have brushed the egg white onto the seam, you'll want to brush a little more onto both ends of the egg roll. Doing this helps to ensure that no filling falls out when you fry them up.

Tips & Warnings
  • Cover the sealed egg rolls. When making large batches of egg rolls, put them in a container and cover with plastic wrap or aluminum foil. This will keep them from drying out and becoming unsealed before you cook them.
  • Avoid placing sealed egg rolls too closely together. After the egg rolls are sealed, leave a bit of room when placing them in the pan before they are cooked. If you place the egg rolls too closely together, the wrappers will stick to each other and tear as you take the egg rolls out to cook them.
