How to Make Mexican White Cheese Sauce

Mexican white cheese sauce is a very popular smooth sauce that can be either hot or mild. It is usually served on top of chimichanga's, with nacho chips or inside of hot flour tortillas. With a few ingredients, you can make Mexican white cheese sauce using the following steps. Does this Spark an idea?

Things You'll Need

  • Water
  • A double boiler
  • Shredded cheese - Monterey Jack, Asadero or Chihuahua
  • Green chilies
  • Half and half milk
  • Chopped onions
  • Ground cumin
  • Salt and pepper
  • Fresh, chopped cilantro
  • A serving bowl

Instructions

      Fill the bottom pan of the double boiler with water. Set the top pan of the double boiler down over the bottom pan of the double boiler.

      Combine all the ingredients in a double boiler. Set the double boiler down on a stove burner.

      Turn the stove burner on to a medium-low heat and cook the ingredients until they are melted and blended together. Stir the ingredients occasionally while cooking.

      Turn the stove burner off and remove the top pan of the double boiler from the bottom pan of the double burner.

      Pour the Mexican white cheese sauce into a serving bowl and serve hot. You can also pour the melted mixture over the top of chimichangas.

Tips & Warnings

  • If water comes out around the rim of the top pan of the double boiler, remove the top pan and pour some water out of the bottom pan.

  • Use Monterey Jack Cheese for the Tex-Mex version and Chihuahua or Asadero Cheese for the more traditional Mexican version.

  • Do not let the cheese come to a quick boil. Sauce needs to be cooked gently on a medium-low heat.
