How to Make Sticky Chicken

Sticky chicken is quite simple to make, but to do it right requires two days. Although the preparation may be a long process, the result is a succulent, golden brown delight that will be worth every bit of effort.

Instructions

Difficulty: Moderate

Things You’ll Need:

  • Salt
  • Paprika
  • Hot red pepper
  • Freshly ground white pepper
  • Freshly ground black pepper
  • Dried Thyme
  • Dried Rosemary
  • Whole chicken
  • Sweet onions, cut into large chunks

Step1
Combine the salt, paprika, hot red pepper, white pepper, black pepper, dried thyme and rosemary together in a small mixing bowl and set it aside.
Step2
Rinse the chicken inside and out under cool running water and remove the giblets from the cavity. Pat the chicken dry with paper towels.
Step3
Rub the dried chicken inside and out with the spice mixture and then put the onion chunks in the cavity.
Step4
Wrap the chicken tightly with plastic wrap, making sure it's completely and securely wrapped.
Step5
Place the wrapped chicken in the refrigerator overnight. Unwrap the chicken the following day and put it in a shallow roasting pan.
Step6
Preheat the oven to 260 degrees F. Place the chicken in the preheated oven and roast it for 5 1/2 hours. After the first hour of roasting time, baste the chicken with the juices every 20 to 30 minutes.
Step7
Remove the onion chunks from the cavity and allow the sticky chicken to cool for a few minutes before serving.
