How to Make a Tomato Fried Egg

Tomato fried eggs is a traditional Chinese family style side dish. It's typically served with rice and noodles, although not for breakfast. This recipe is made easy by using common household ingredients in place of an heirloom recipe that calls for more exotic ingredients.

Things You'll Need:

  • Tomato
  • Green onions
  • Cutting board
  • Chef's knife
  • Eggs
  • Two mixing bowls
  • Salt
  • Pepper
  • Ketchup
  • Cornstarch
  • Water
  • Cooking oil
  • Wok
  • Wooden spatula
  • Serving platter
  1. Step 1

    Chop a tomato and green onion using a cutting board and chef's knife. Keep them separated and set aside.

  2. Step 2

    Scramble the eggs in a mixing bowl with green onions and a dash of salt and pepper.

  3. Step 3

    Mix ketchup, cornstarch and water in another mixing bowl. Add a pinch of salt and pepper to flavor.

  4. Step 4

    Heat the cooking oil in a wok over medium, high heat. Stir fry tomatoes and ketchup mixture until it thickens using a wooden spatula. Remove them from the wok.

  5. Step 5

    Scrape the wok clean and reheat more cooking oil over medium heat. Stir fry the eggs until slightly firm.

  6. Step 6

    Add the tomato mixture quickly until thoroughly it's combined with the eggs. Remove from the heat and serve on a platter.

Tips & Warnings
  • Don't overcook the eggs once the tomato mixture is added.
