How to Make Green Beans Parmesan Style

This is a summer wonder that can not be created well during the winter with frozen vegetables. Fresh veggies are the way to go for this vegan favorite.

Instructions

Things You'll Need:

  • 2 tsp reduced-calorie margarine
  • 2 large shallots, sliced and separated into rings
  • 1 lb fresh green beans
  • 1 cup canned low-sodium chicken broth
  • 1/8 tsp salt
  • ¼ cup freshly shaved Parmesan cheese
  1. Step 1

    Melt margarine in a small nonstick skillet over medium to high heat. Add shallots; cook 20 minutes or until golden, stirring as needed. Remove from heat, and set aside.

  2. Step 2

    Wash beans; remove ends. Place beans, chicken broth, and salt in a medium saucepan; bring mixture to a boil. The best beans are home grown without all the extra chemicals. Shop your local farmer's market for some great finds.

  3. Step 3

    Cover, reduce heat, and simmer 12 to 14 minutes or until beans are tender. You should be able to poke with a fork with little to no resistance.

  4. Step 4

    Drain beans, and stir in shallots. Transfer to a serving dish, and sprinkle with cheese.

  • This is a quick and easy side dish that blends well with just about any main dish.
  • Never leave the stove unattended.
