How to Make Zephyr Corn Fritters

Corn fritters fried in a skillet are a favorite summer meal at my house. These can be served with maple syrup for breakfast or eaten just so for lunch or dinner.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 12 ears of corn, raw or cooked
  • 3 eggs, whites and yolks separated
  • 1-1/2 teaspoon all-purpose flour
  • Salt to taste
  1. Step 1

    Grate corn from cob and mix with egg yolks.

  2. Step 2

    Beat egg whites until fairly stiff. Fold egg whites in corn mixture. Add salt as desired.

  3. Step 3

    Fry corn fritters, like pancakes, in butter, lard, or shortening. Serve hot.

Tips & Warnings
  • Pepper can be added to recipe if the fritters are being served without maple syrup.
