Things You'll Need:
- 12 ears of corn, raw or cooked
- 3 eggs, whites and yolks separated
- 1-1/2 teaspoon all-purpose flour
- Salt to taste

Step 1
Grate corn from cob and mix with egg yolks.

Beat egg whites until fairly stiff. Fold egg whites in corn mixture. Add salt as desired.

Step 3
Fry corn fritters, like pancakes, in butter, lard, or shortening. Serve hot.
