Interested in once a month cooking but having a hard time finding kid-friendly meals? What kid doesn't love pizza??? Here's a pizza that they'll love that's easy for you to prepare ahead of time and reheat, as well as tastier than frozen pizza from the store.

Instructions

Difficulty: Moderately Easy

Things You’ll Need:

  • cookie sheet
  • cooking spray
  • spatula
  • plastic wrap
  • wide aluminum foil
  • pizza dough
  • pizza sauce
  • shredded cheese
  • your choice of pizza toppings

Step1
Spray cookie sheet with cooking spray and spread the pizza dough evenly across the pan. Yes, this will make pizza in the shape of a rectangle, but this shape is easier to store it in the freezer, especially a narrow side-by-side freezer.
Step2
Spread sauce over the pizza dough, then cheese, then toppings. Be sure to lightly press the pizza toppings into the sauce so none are loose.
Step3
Place the cookie sheet into the freezer until the pizza is frozen, which will be a couple hours. Tear off enough plastic wrap to completely wrap around the pizza. Using a spatula, carefully remove the frozen pie from the cookie sheet and place in the middle of the plastic, and securely wrap it up. Then do the same with the foil. Voila! Pizza that will store easily in your freezer!
Step4
When ready to reheat, do not defrost the pizza. Simply unwrap the pizza (save the foil so it can be reused next time), pop onto a sprayed cookie sheet, and bake in a preheated 400 degree oven for approximately 15-22 minutes. Watch it carefully for doneness and take out promptly when the pizza crust is little golden and the cheese is completely melted. While it's cooking, you can make a salad, set the table, and be ready for a dinner that's ready in less than half an hour, less time than it takes to order a pizza and have it delivered!

Tips & Warnings

  • If you use my pizza dough recipe, "How to make pizza dough with your bread machine", using this much dough on a cookie sheet will produce a thick, bready crust. If you prefer a thinner crust, simply take off some of the dough and use in two 8" cake pans. This can be a fun activity for kids to make their own personal pizzas, especially if they're picky eaters and need to customize their pizzas to their own tastes.
  • Frozen foods do not last forever! Be sure to eat your pizza within a month...if you can wait that long!
