Things You'll Need:
- A dozen asparagus spears, trimmed
- 12 medium red potatoes (if you prefer a different potato may be used)
- 1 medium red onion, sliced just into slivers (like half rings)
- 3 tbsp extra virgin olive oil (more or less to taste)
- 3 tbsp both chives and parsley
- 1-2 tbsp white wine vinegar
- 1-2 tsp salt
- 1-2 garlic cloves minces well
- 1 tsp dijon mustard
- 2 tbsp low fat mayonnaise
- 1 can low sodium large whole black olives

Step 1
You may add celery if you wish and pepper to taste.
You can also play around and add different ingredients that you like. -
Step 2
Boil your potatoes and then slice them in quarters with the skins left on. Steam the asparagus for about 5 minutes or until tender.

Step 3
Next add all the rest of the ingredients in a bowl and toss until evenly coated. When you are down sprinkle a couple dashes of paprika on the top and chill.

Just printed this delicious-sounding recipe! Thank you so much for posting it. Do you think it would work just as well using canned premium asparagus? I have that in my pantry now, along with the red potatoes and onion...I would love to know that canned could work just as well.
