How to Make Fresh Sofrito

Sofrito, a fresh blend of vegetables and spices in olive oil used as a seasoning for traditional Spanish cooking.

Instructions

Difficulty: Moderately Easy

Things You’ll Need:

  • Food Processor
  • cutting board
  • sharp knifes
  • large bowl
  • 1 lrg spanish onion
  • 4 garlic cloves chopped
  • 1 green pepper
  • 1 bunch of culantro leaves
  • 1 tblspn of dried oregano
  • 1/4 pound of small sweet chili peppers (can be purchased at a Spanish grocery store)
  • 1 pound of tomatoes
  • 1 cup of extra virgin olive oil
  • glass jars for storage or ice cube trays

Step1
Wash and cut into pieces the onion, green pepper, cilantro leaves, chili peppers, and tomatoes.
Step2
add to food processor and puree. Add 1/2 cup olive oil 1 tblspn of oregano and stir.
Step3
In a heavy skillet, add 1/2 cup of olive oil and ingredients from food processor and bring to a boil over high heat. Reduce heat and cook uncovered for 30 minutes stirring occasionally.
Step4
Allow to cool completely before storing in jars or distribute 2 tblspns of sofrito in each cube of ice cube trays. Set in freezer, un-mold and store in freezer bags until ready to use.

Tips & Warnings

  • frozen sofrito cubes will not stick together. Two or Three cubes and be substituted in recipes serving 6 to 8 that require sofrito.
  • Ingredients are optional and can be adjusted to taste.
