This recipe is one that I've perfected over the years. The flavor is great, and placing the parmesan cheese into the eggs separates the cheese flavors. Preparation time includes grating the cheese and mixing the eggs. Cooking times very to taste. Some like eggs well done, I prefer them just set. This I leave up to you to decide. This recipe yields 2 servings.

Instructions

Difficulty: Easy

Things You’ll Need:

  • 4 extra large egg
  • fine salt (to taste)
  • fresh ground black pepper (to taste)
  • nutmeg, freshly ground (to taste)
  • 1 ounce Parmesan cheese (grated)
  • 2 tablespoons butter
  • 2 ounces Gruyeres cheese (grated)

Step1
Break the eggs into a bowl
Step2
Season to taste with salt, pepper, and nutmeg.
Step3
Add Parmesan cheese.
Step4
Beat the eggs with a fork until just mixed.
Step5
Heat a large frying pan over medium heat.
Step6
Add the butter and allow it to melt and color slightly.
Step7
Add the beaten eggs.
Step8
Use the flat side of the fork to stir the eggs until they start to set.
Step9
Smooth the top and leave the eggs to cook.
Step10
Add the Gruyeres cheese over the surface.
Step11
Fold the omelette into thirds and flip it onto a heated serving plate.

Tips & Warnings

  • Add some bits of ham or steak if your a meat lover
  • Don't let it burn
  • Clean up after yourself
