  • 1/2 tsp. baking soda
  • 1 pinch salt
  • 1 1/4 cups mashed bananas
  • 1 tbsp. canola oil
  • 1/3 cup reduced-fat buttermilk
  • 2 tsp. vanilla
  • 1/4 cup chopped walnuts

      Preheat the oven to 350 degrees.

      Spray a 9-by-5-inch loaf pan with nonstick cooking spray.

      Blend dry ingredients in large mixing bowl.

    This recipe turned out terrific! I didn't have buttermilk so used sour milk instead. The volumne was a little affected as seems to be the case with all no sugar baking, but I must say, this is the best diabetic recipe I have tried to date. Delicious!!
