Instructions

Difficulty: Moderately Easy

Things You’ll Need:

  • About a dozen manicotti pasta
  • 28 ounce jar spaghetti sauce
  • 16 ounce carton ricotta cheese
  • 8 ounces, shredded mozzarella cheese
  • About 5 ounces fresh spinach, chopped.
  • 1 egg
  • 1/2 teaspoon garlic salt
  • Salt and pepper to taste
Step1
Prepare manicotti according to package directions, rinse under cold water and lay each piece on a non-stick flat surface.
combine spinach, ricotta, 1/2 of the shredded cheese, egg, and spices in a large bowl and mix thoroughly.
Step2
Pre-heat oven to 350 degrees. Cover the bottom of a 9x13 inch baking dish with spaghetti sauce.
Stuff manicotti with spinach filling carefully, making sure not to tear pasta. Place manicotti in baking dish. Pour remaining sauce over manicotti. Sprinkle rest of mozzarella chesse over entire dish.
Step3
Bake, covered, for 15 minutes. Remove cover, bake for additional 20 minutes. Remove from oven; allow dish to cool 5 minutes. Use a long spatula or similar object to handle manicotti or pasta could burst open.

Tips & Warnings

  • Taste great served with cooked, long stem asparagus and garlic bread.
