How to cook a Coon *Raccoon)

I'm from Arkansas and my husband and son are hunters. They bring home all kinds of wild game for me to cook. Coon meat is an acquired taste. But if you ever get the nerve up to try it, you might find you like it!

Instructions

Difficulty: Moderately Easy

Things You’ll Need:

  • skinned and cleaned with musk bags removed coon
  • 1 cup vinagar
  • enough water to cover coon
  • 4 to 5 large onions
  • 2 to 3 stalks of celery
  • 1/2 teaspoon sage
  • 3 cloves of garlic
  • 8 to 10 midium sweet potatoes
  • 2 pkg brown gravy mix
  • enough vegetable oil to cover bottom of skillet
  • salt and pepper to taste

Step1
Clean and dress coon properly, making sure all the kernels or musk glands are removed.
Step2
Cover Coon in water add vinegar and let soak for a couple of hours; drain.
Step3
Place whole Coon in large pot and recover with water. Add onions, celery, sage, garlic, salt and pepper. Boil until Coon is tender. Remove from heat and drain.
Step4
Heat skillet with vegetable oil and brown coon. Then place in roasting pan.
Step5
Make brown gravy with direction on pkgs. Pour over Coon. Place sweet potatoes around coon and bake until they are done at 350 degrees.

Tips & Warnings

  • You can use road kill for this but make sure it is fresh.
  • Make sure if you have unexpected guess over to tell them right away that the animal that is baking in your oven is a Coon because if you cook the Coon whole it can look like your baking a cat. Don't want the neighbors thinking you and your family have been eating the missing cats in the neighborhood.
