Spiced Up Spaghetti

Taco spaghetti is pasta topped with spicy sauce and all the toppings you put on a taco, like onions, tomatoes, sour cream, grated cheese and hot sauce. Here’s how to make a large batch of taco spaghetti for four hungry people.

Difficulty: Easy
Instructions

Things You'll Need:

  • 1 lb. hamburger or ground turkey
  • 28 oz. bottle of spicy spaghetti sauce
  • 12 oz. thin spaghetti or vermicelli
  • 4 oz. grated extra sharp cheddar cheese
  • 1 yellow or sweet onion
  • 4 scallions
  • 4 oz. regular or lowfat sour cream
  • 2 cups shredded lettuce
  • 1 cup diced tomato
  • Sliced black olives, sliced jalapenos
  • Hot pepper sauce
  • Salsa
  • Spices: salt, garlic powder, pepper and cumin
  1. Step 1

Dice one cup of onions for sauce and dice scallions and tomatoes for toppings. Slice black olives and shred about ¼ head of lettuce for toppings. Put toppings in small bowls and set aside.

  2. Step 2

Saute 1 cup diced onions lightly and remove from pan. Lightly brown 1 lb. of hamburger or ground turkey, adding salt, garlic, pepper and cumin to taste.

  3. Step 3

Pour a large jar of spicy prepared spaghetti sauce into a large pot on medium heat. Add browned meat and onions to sauce and simmer while you prepare the pasta and toppings.

  4. Step 4

Boil large pot of water with 1 tsp. salt and 1 tbsp. olive oil, adding 12 oz. thin spaghetti or vermicelli to rapidly boiling water. Cook pasta on high simmer for about six minutes until just tender and drain.

  5. Step 5

Place sour cream, shredded cheese and salsa in bowls with spoons. Put all other toppings in center of serving table with spoons. Serve hot spaghetti and sauce on large plates and garnish the top with taco toppings. Serves four.
