This is a wonderful side dish, and is absolutely delicious. This recipe serves 6 but I would recommend making an extra one, as it goes fast. Because it is sweet, even the pickiest eater will enjoy it. THANKS :)

Instructions

Things You'll Need:

  • 3 Carrots, peeled and sliced
  • 4 Sweet Potatoes, peeled and sliced
  • 3 Tart Apples, cored, peeled and sliced (any hard apple will do-we prefer Granny Smith)
  • 1/2 Cups Dark Brown Sugar
  • 3 TBSP Vegetable Oil
  • 1/2 Cup Water
  • 2 1/2 Quart Baking Dish
  • Heavy Duty Tin Foil
  • Salt and Pepper (optional)
  1. Step 1

    Cook carrots and potatoes until tender. You may do this by boiling (drain when done), steaming or putting in the microwave.
    For this step, I have to recommend my favorite 'new' item-Ziploc Steam Cooking Bags: you simply place your ready cut items in the bag and microwave: there are directions in the package themselves as well as on the bag itself. Simple to use-no mess-and the food comes out great!

  2. Step 2

    Pair, quarter, core and slice apples; but not too thin, as these will be baked and you do not want them too soft. About 1/4" works well.

  3. Step 3

    Preheat over to 360 degrees. Lightly spray 2 1/2 quart baking dish with cooking spray (I prefer using a glass dish).

  4. Step 4

    Alternate the carrots, potatoes and apples in layers-in that order (ie: carrots, potatoes, apples). After each layer season with sprinkle of brown sugar and oil. (you may also sprinkle some salt and pepper if you'd like). Make sure that you do not add too much sure or oil-just enough to cover.

  5. Step 5

    After everything is layered, add water.

  6. Step 6

    Cover with tinfoil.
    Bake for 30 minutes in 350 degree over for about 30 minutes, or until items are tender.

  7. Step 7

    Remove foil and continue baking until top is golden brown-about 5-10 minutes more.

  8. Step 8

    Serve warm.

Tips & Warnings
  • Use whatever hard apple that you like-there are many varieties out there
  • To save time, buy preliced carrots
  • Depending on how you like it, a bit more or less sugar may be added
  • It is best if heavy duty tin foil is used
  • Hot brown sugar, if touched, can really burn...be careful of the entire dish when taking out of oven, but especially careful not to touch sugar.
