An easy to prepare and well liked Vanilla/Coconut Wafer Cake.

Instructions

Difficulty: Moderately Easy

Things You’ll Need:

  • 1 cup softened butter
  • 2 cups white sugar
  • 6 eggs
  • 12oz crushed vanilla wafers
  • 1/2 cup mile
  • 1 1/2 cups flaked coconut
  • 1 cup chopped nuts (optional)
  • Powdered Sugar
  • Large Mixing Bowl
  • Hand Beater
  • Spatula
  • Tube Pan
  • Serving Tray
Step1
Heat oven to 350 degrees with a baking rack at the second lowest point.
Step2
Grease and flour a 10 inch tube pan.
Step3
In a large mixing bowl, cream the butter and sugar. Add the eggs, one at a time and beat mixture until light and fluffy.
Step4
With a spatula, fold in the vanilla wafers, coconut and nuts (optional).
Step5
Pour into pan and bake for 90 minutes.
Step6
Allow to cool for 20 minutes before removing from tube pan to a serving tray.
Step7
Completely cool, top with powdered sugar, slice and serve.

Tips & Warnings

  • Whipped cream, ice cream or a light frosting compliment this recipe well.
  • If the bottom of your tube pan is not removable, line with parchment paper before pouring batter.
