This tangy condiment is splendid as a marinade or for basting when grilling or roasting ham, pork, turkey and chicken.

Instructions

Difficulty: Moderately Easy

Things You’ll Need:

  • 1-2 tablespoons butter
  • 1 large sweet onion chopped (about 1 cup)
  • 1 large can (28 oz) whole or chopped tomatoes (or equivalent fresh)
  • 1 8 oz can tomato sauce
  • ¾ teaspoon salt
  • 1 cup packed brown sugar
  • 3 tablespoons fresh basil (1 tablespoon dried)

Step1
Melt butter in heavy bottomed skillet over medium heat. Cook onions, stirring, until golden.
Step2
Add tomatoes, salt, sugar and basil. Bring to a boil.
Step3
Reduce heat to simmer, stirring occasionally and cook 4-6 hours or until thick as ketchup.
Step4
Allow to cool. Pour sauce into covered glass or plastic container. Cover and refrigerate until ready to use.

Tips & Warnings

  • Watch carefully as this sauce simmers. If needed set a timer to remind yourself to stir occasionally.
  • Best used within a 3-4 days!
  • Particularly wonderful when used to grill pork or pork ribs!
