Things You'll Need:
- 3 oz. package of cream cheese
- 1 cup sliced raspberries
- 1/4 cup sugar
- Hot water
- 3 oz. package of raspberry gelatin
- Dash of salt
- Sherbet glasses

Step 1
Soften the cream cheese by letting stand at room temperature. While this softens, combine the sugar and raspberries and allow to stand for 2 minutes. As they stand a sweetened amount of raspberry juice will form.

Drain the raspberries and add hot water to the juice to make a volume of 1 3/4 cups. Dissolve the gelatin and a dash of salt in the liquid. Divide this liquid in half and pour one half into the sherbet glasses and put in the refrigerator until set.

Put the other half of the gelatin into the refrigerator until it starts to thicken. Remove and mix a small amount of the gelatin with the cream cheese. Mix these well until smooth. Add the remaining gelatin in two more steps, mixing each time until the resulting mix is smooth.

Place in a mixer and whip until the volume of the mixture doubles in size. Once doubled, fold in the raspberries carefully and pour into the top of the sherbet glasses. Place back in the refrigerator to set. If desired, top with whipped topping before serving to your guests.
