How to make an authentic and tasty spicy red sauce. For those of us that like a little zing to our everyday dinner meals. Think easy arribiatta!

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  1. Step 1
    garlic & onion

    garlic & onion

Dice your onion and mince the garlic

  2. Step 2

In a large pot, add 2 table spoons of olive oil (enough to cover the bottom) and turn up the heat to medium. Once it is warm add the onion and lower the heat to low/ medium low.

  3. Step 3

Cook the onion slowly until it starts to turn brown at the edge and the center is clear. Add the garlic and a little salt and pepper. I like to add a little red pepper flakes at this point so they fry in the oil and start to add heat. Add about 1 teaspoon of red pepper flakes and stir.

  4. Step 4

Cook the garlic for 3-4 minutes (on low/medium low) then add your tomato. I like to use crushed tomato, but you can use diced if you like your sauce chunkier. Add a 1/2 cup of water and bring to a boil.

  5. Step 5

once the sauce boils lower to a simmer. Add any additional red pepper flakes (I like to add at least another teaspoon if not more) and 1/4 teaspoon of Italian spices. Simmer for at least 45 minutes up to 2 hours.

  6. Step 6

Place over your favorite pasta, vegetable or chicken. ENJOY

Tips & Warnings
  • do not let the onions or the garlic burn

on 4/6/2008 Sounds delicious and easy enough that I could actually make it!! Plus, I love that it is vegetarian, so I can use it for my veggie friends, but can also add meat for meat lovers.
