How to make spicy tuna salad

Tuna salad for sandwiches with a Kick and a twist!

Instructions

Things You'll Need:

  • tuna in water or waterless
  • zuccini
  • mayo or miracle whip (or favorite dressing)
  • creamy horseradish
  • fresh cilantro
  • sweet onion &/or green onion
  • salt/pepper to taste
  1. Step 1

    Place drained tuna into medium bowl and set to side.

  2. Step 2

    Chop 1/2 bunch of fresh cilantro finely. Be sure to use a very fine chop on the stems but DO include them! Tons of flavor an crunch. Add to bowl of tuna

  3. Step 3

    Finely chop 1/4 - 1/2 of sweet onion (Walla Walla is my favorite). You can substitute a white onion or RED for added KICK.
    Add to tuna/cilantro

  4. Step 4

    take 1/2 fresh zuccini (green or yellow) - small 1-1.5" diameter.
    Dice into fine pieces (cut into strips / rotate 1/2 turn and cut in to strips and then chop across in legnths less than 1/4". Very fine chop.
    Add to Tuna/cilantro/onion mix

  5. Step 5

    Add 1-2 TBSP of creamy horseradish to mixture.
    Add enough of your favorite dressing (can use fat free dressings). Suggest Mayo , Miracle Whip, Ranch or other blendable flavor.
    Salt / Pepper / Garlic to taste.

  6. Step 6

    Mix well and allow to sit for 10 minutes or longer. Can be covered and refrigerated for later use.

  7. Step 7

    Serve on Toast points, crackers, as a spread for your favorite fresh focaccia or other gourmet breads.
    Grate fresh cheese over top and broil for a hot sandwich. Add a sprinkle of Paprika for an added "dash"

Tips & Warnings
  • Can chop beefsteak tomatoes (or cored Roma tomatoes) and add for extra liquid in place of some of the dressing.

on 5/26/2008 It's great! If you're vegan you can shred some lettuce/spinach or maybe even tofu to act as your spread base. So meatless is an option.
