How to Make All Natural and Healthy Buckwheat pancakes

These are a great breakfast for those who are looking to eat better and more naturally. Buckwheat pancakes are naturally sweet tasting and delicious!

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • For Your Batter:
  • ½ Cup - unbleached white flour
  • ½ Cup - buckwheat flour
  • 2 Tbls - Silken Tofu (blended until smooth)
  • 1 Tbls - Natural Peanut or Any Nut-Butter (cashew, soy or almond are good)
  • 1 Tbls - Apple sauce (no sugar added)
  • 2 tsp - oil (flax or hemp is best, but olive or vegetable will do)
  • 2 tsp - 100% maple syrup or honey (Blueberry or wildflower is best for this)
  • 1 Cup - Soy Milk or any nut/seed/legume milk
  • Other things you'll need:
  • Butter (soy “Butter” is better then margarine)
  • ¼ Cup - Berries (Blueberries are traditional, but raspberries or any berry
  • Optional additions –
  • ¼ Cup - chopped nuts (instead of the berries)
  • ¼ Cup – Chocolate Chips(darker the better!) or Carob Chips
  • 1 Tbls - cooked oatmeal
  • ¼ tsp - Coffee… instant or a tablespoon of coffee brewed or even coffee liquor
  • ¼ tsp – Cinnamon powder
  1. Step 1

    Mix all ingredients except for the berries or nuts. Coffee or cooked oats can go in with the regular batter. You want to mix only until the lumps smooth out and then stop. Fold in your berries or nuts.

  2. Step 2

    Cook on a frying pan greased with ¼ to ½ Tbls of “butter” over medium-low heat.

  3. Step 3

    You want to slowly cook these guys, I like to make smaller ones with this recipe, but you can effectively make larger ones.

  4. Step 4

    Flip when they are done bubbling and appear nearly cooked all the way through and just lightly brown the other side.

  5. Step 5

    Serve hot with Jam, butter and maple syrup, everyone likes their pancakes differently!

Tips & Warnings
  • Preheat the oven its lowest temperature and then turn it off once it’s done preheating. I keep each pancake warm in a pie pan until all are done.
  • You want to add your “butter” whenever you begin another set of pancakes
