How to make Caribbean Fillet of Fish

It is summer time again. Pull out your grill and fire it up. You can make this recipe on a charcoal grill, gas grill, smoker grill, or a sandwich grill. Either way indoor grilling or outdoor grilling it tastes great. Travel to the Caribbean with this tasty mix of flavors.

Instructions

Difficulty: Moderately Easy

Things You’ll Need:

  • 3 pounds white fish fillets
  • 4 peeled and finely chopped shallots
  • 4 minced cloves garlic
  • 1 cup orange juice
  • 1 cup white wine
  • 1/4 cup dark rum
  • juice of 2 limes
  • 2 tablespoons fresh chopped rosemary
  • 1/4 cup soy sauce
  • 1/4 cup chopped parsley
  • 1/4 teaspoon white pepper
  • 1/4 teaspoon salt

Step1
Fish recipes make a great diet recipe. Fish is healthy and good for your heart not to mention it will help you loose weight quickly when you replace a meat recipe with fish. Plus this meal is great for dinner.
Step2
Remove skin from fish fillets using a cutting board and chef’s knife. Make sure all bones have been removed. Rinse and pat dry with paper towels.
Step3
Combine other ingredients (everything but the fish) in a large saucepan or skillet. Bring to a boil and reduce heat to a simmer. Cook until the mixture is reduced by half.
Step4
Preheat grill. Grill fish about 3-4 minutes per side. Remove from grill and pour equal amounts of the sauce over each fillet.

Tips & Warnings

  • This works well with fresh vegetables.
  • Never leave your stove, oven, or lit grill unattended.
