Things You'll Need:
- 300g cream cheese
- 125g crushed digestive biscuits
- 75g melted butter
- 60g sieved icing sugar
- 1/2 teaspoon lemon juice
- 250ml whipped double cream
- 150g chopped white chocolate
- 1 punnet fresh raspberries
- Glass pie dish (roughly 20cm diameter)

Step 1
Combine the melted butter and crushed digestive and press into the bottom of your glass pie dish.
Place in the fridge to harden while you continue. -
Step 2
Mix the sieved icing sugar, cream cheese and lemon juice together.

Add the whipped cream to the cream cheese mix, stir with a metal spoon until combined.

Add 100g of the chopped chocolate to the mix.

Crush the raspberries lightly and add to the cheesecake mixture.

Cover the biscuit base and smooth over the top. Put in fridge to become firm.

Melt the remaining chocolate over a pan of boiling water and drizzle over the top of the cheesecake in your own design.
