How to make a delicious raspberry and white chocolate cheesecake

Instructions

Things You'll Need:

  • 300g cream cheese
  • 125g crushed digestive biscuits
  • 75g melted butter
  • 60g sieved icing sugar
  • 1/2 teaspoon lemon juice
  • 250ml whipped double cream
  • 150g chopped white chocolate
  • 1 punnet fresh raspberries
  • Glass pie dish (roughly 20cm diameter)
  1. Step 1

    Combine the melted butter and crushed digestive and press into the bottom of your glass pie dish.
    Place in the fridge to harden while you continue.

  2. Step 2

    Mix the sieved icing sugar, cream cheese and lemon juice together.

  3. Step 3

    Add the whipped cream to the cream cheese mix, stir with a metal spoon until combined.

  4. Step 4

    Add 100g of the chopped chocolate to the mix.

  5. Step 5

    Crush the raspberries lightly and add to the cheesecake mixture.

  6. Step 6

    Cover the biscuit base and smooth over the top. Put in fridge to become firm.

  7. Step 7

    Melt the remaining chocolate over a pan of boiling water and drizzle over the top of the cheesecake in your own design.

  8. Step 8

    Enjoy people's comments as they see your gorgeous creation and watch their faces light up when eating.

Tips & Warnings
  • It is important that the icing sugar is sieved or lumps will form in the mixture.
  • The chocolate should be chopped quite roughly with some small, some larger pieces.
  • Melt the chocolate in a bowl over a pan of boiling water to prevent the chocolate from burning.
  • Do not heat the chocolate too much or it will burn.
  • Be careful when melting the chocolate over the boiling water, as the steam may burn you when removing the bowl.
