Things You’ll Need:
- Eye of round beef roast
- Fresh spinach leaves
- Sliced provolone cheese
- Butcher's twine
- Sharp knife
Step1
Trim the eye of round roast of all fat and square the ends of the roast. Squaring the ends will make the finished roll much easier to cut pinwheels.
Step2
Slice into the roast lengthwise about a 1/2 inch to 3/4 inch deep and then cut the roast along the length to form a flap of meat. Continue to slice along the roast until the roast unrolls into a flat square piece of meat approximately 3/4 inch thick.
Step3
Place a layer of spinach leaves to cover the meat. Wash and clean the spinach before using it to cover the surface of the roast. Remove any long stems. Once the spinach layer is in place, make a second layer of spinach over the roast to ensure that there is enough to look appealing and to add a bit of flavor. Place a layer of provolone cheese two slices thick across the roast surface.
Step4
Layer on top of the spinach, provolone cheese in two-slice thickness.
Step5
Roll the roast back up, so that you have wrapped the spinach and provolone inside the roast. Once you have finished rolling the roast back up, look at the end and you will see the pinwheel design formed by the beef, spinach and provolone.
Step6
Tie the roast together using butcher's twine at two inch spacing down the length of the roast. Cut the roast between the ties of twine and you will have pinwheels that are two inches thick. These are suitable for grilling, baking, frying or broiling in the oven.
