Things You'll Need:
- Spanish olive oil
- Chicken, cut in small pieces
- Pork, cut in small pieces
- Chopped onions
- Garlic, crushed
- Ham, uncooked, cut into strips
- Salt
- Pepper
- Beef broth
- Bay leaf
- Saffron
- Uncooked rice
- Tomatoes, peeled and chopped
- Green peppers cut into strips
- Cooked shrimp
- Green peas
- Green beans
- Canned mushrooms

Step 1
Heat the Spanish olive oil in a large skillet over medium heat.

Add the chicken and pork to the hot oil and cook it for about 15 minutes, until the chicken is brown on both sides. Add the garlic, onion and ham and cook the mixture for about 5 more minutes. Season the mixture with salt and pepper.

Mix the beef broth with the bay leaf and saffron, add it to the mixture in the skillet and cook it for 30 minutes.

Remove the bay leaf from the mixture. Stir in the rice and cook, covered, for 15 minutes.

Heat a little more Spanish olive oil in a separate, heavy skillet and cook the tomatoes and peppers for about 5 minutes. Add the beans, peas, and a small amount of broth to keep them from sticking, and cook them, covered, until the vegetables are tender.

Add the vegetable mixture to the rice mixture, and stir in the mushrooms and cooked shrimp.

Season the paella to taste with salt and pepper, and serve hot.
