How to Make Spanish Flan
Spanish flan is a custardy dessert with a burnt sugar topping, baked in a shallow pan. Flan is a traditional favorite in Spanish-speaking countries, and it will soon become a favorite in your home, as well. Give it a try, and watch as they come line up for seconds. Does this Spark an idea?
Things You'll Need
- Eggs
- Sugar
- Evaporated milk
- Sweetened condensed milk
- Pure vanilla extract
- Aluminum foil

Preheat the oven to 350 degrees.

Place the sugar in a medium saucepan, and heat it over medium-low heat until it turns golden and liquefies into syrup.

Pour the hot syrup slowly into a 9-inch glass baking dish, making sure to coat the bottom and sides of the dish.

Beat the eggs in a large mixing bowl.

Add the evaporated milk, condensed milk and pure vanilla extract, and beat the mixture until it's smooth. Cover the bowl with aluminum foil.

Bake the Spanish fan for 60 minutes.

Let the flan cool completely, and invert it on a serving plate. Be sure the serving plate has edges, or the flan can easily slide off.

Tips & Warnings
If you keep the baking dish warm in the oven while you prepare the flan, the mixture won't set up as quickly, creating a smoother flan.
To vary the basic flan, add a bit of lemon zest, or add some almond extract to the custard and sprinkle a few slivered almonds over the top.
