How to Make Middle Eastern Basbousa

  1. Middle Eastern Basbousa

      Pre-heat the oven to 350 degrees F.

      Melt the butter or margarine in a small saucepan or in the microwave oven, and let it cool until it reaches room temperature.

      Combine the buttermilk and the sugar in a large mixing bowl. Mix the semolina, baking soda, baking powder and vanilla in a separate bowl. Stir the dry ingredients into the buttermilk mixture, and stir in the melted butter.

      Oil a baking pan or spray it with non-stick spray, and pour the mixture into the pan. Bake it for 25 to 30 minutes.

      Remove the Basbousa from the oven and allow it to sit for 20 minutes.

      Bake the Basbousa for an additional 30 minutes, and pour syrup over the warm Basbousa just before serving.

    Sugar Syrup for Basbousa

      Combine the water, sugar and lemon juice in a small saucepan.

      Heat the syrup on medium heat until it comes to a boil.

      Reduce the heat and simmer the sugar syrup for about 20 minutes. Let the syrup cool slightly before pouring it on the Basbousa, because as it cools, the syrup will thicken.
