How to Make a Chickpea Masala
Chickpea masala is classic Indian dish, traditionally eaten as a main meal with chappati bread or rice, or served with lamb or chicken. You can make chickpea masala as mild or as spicy as you like. It's not difficult, so don't hesitate to give it a try. Does this Spark an idea?
Things You'll Need
- Canola oil or vegetable oil
- Garlic cloves, minced
- Spanish onion, finely chopped
- Jalapeno pepper
- Fresh ginger, crushed
- Garam masala
- Curry powder
- Tomato paste
- Chickpeas
- Water
- Freshly squeezed lemon juice
- Salt
- Rice, cooked
- Cilantro (optional)

Heat the oil in a heavy skillet or saute pan over medium heat. Stir in the chopped onions and saute them until they're golden brown, about two minutes.,

Remove the skillet from the heat and stir in the ginger, garlic, curry powder, jalapenos, tomato paste and garam masala. Put the skillet back on the burner and stir in the water, lemon juice and chickpeas.

Bring the mixture to a boil, then reduce the heat to a simmer for 5 minutes.

Taste the chickpea masala and add more salt, if necessary.

Place some rice in the bowl and ladle the hot chickpea masala over the top.

Garnish with cilantro, if desired, and serve.

Tips & Warnings
Although chickpea masala can be served immediately, the flavors will be enhanced considerably if you let it cool for a few hours and reheat it almost to a simmer. Spoon it over the rice and serve.
Add a bit of red chili pepper or cayenne if you want the chickpea masala on the spicier side.
