If you're lucky enough to have an abundance of beautiful, fresh berries, put them to good use with a delicious fresh fruit tart. Top the fresh fruit tart with a bit of whipped cream, and you've got the perfect summertime dessert.
Combine the sugar, graham cracker crumbs and melted butter, and press them into a deep dish pie plate or a tart pan. Bake the crust at 375 degrees, and allow it too cool completely before filling.

Whisk the cornstarch and sugar together in a saucepan until they are thoroughly blended and free of lumps. Add water and bring the mixture to a rolling boil for about two minutes. Add the gelatin and stir until it's completely dissolved.

Cool the mixture at room temperature for 20 minutes, and pour the berries into the cooled graham cracker crust.

Pour the cornstarch and sugar mixture slowly over the berries, covering as many of the berries as possible.

Refrigerate the fresh berry tart until it sets up, approximately three hours.

Remove the tart from the pan, and spread whipped cream over the top.
Tips & Warnings
Any fresh berries will make a delicious tart. For example, try strawberries, raspberries, blueberries, blackberries, or any combination.
If you don't have fresh berries, frozen berries will also make delicious tarts.
