How to Saute Fish Fillets
There are so many ways to prepare good tasting fish fillets. From broiling to batter-frying, the options are endless. Try to saute, or pan-fry, your fish and have a great tasting meal in no time. Use a small to medium size frying pan that is just big enough for the fillets. Add the flavors you want by adjusting the oil and seasoning.

Turn the heat level to medium-high, and add enough butter or oil to cover the bottom of the pan. Pat your fish fillets dry with a clean kitchen towel or paper towel.

Season the top side of the fillets with your choice of seasonings.

Lay them gently, season-side down into the pan. Then, season the top side of each fillet.

Saute the fish without moving it around for 5 to 8 minutes, or until the bottom turns crispy brown.

Turn fish over, and finish cooking until cooked through. This only takse a few minutes more.

Tips & Warnings
If your fish fillets have the skin on, cook that side last and only for a few minutes. Fish fillets may curl up when cooked. Push the curling ends down with a spatula.
When fish turns translucent, it's done. If you wait until the fish starts to flake, it will be dry and over cooked.
A fillet can be dipped in egg and coated with breading before pan frying.
The oil gets hot and may splatter. Make sure it doesn't get too hot, and burn your fish.
