How to Make a Carrot Nut Cake

Carrot nut cake is a great-tasting desert, and this particular recipe is Passover friendly. By mixing up some eggs, matzoh mix, walnuts and sugar with vanilla extract and topping it with powdered sugar, you have an easy desert suitable for guests that is also easy to transport from gathering to gathering.

Instructions

Things You'll Need:

  • Eggs
  • Sugar
  • Chopped walnuts
  • Ground carrots
  • Vanilla
  • Matzoh cake mix
  • Powdered sugar
  • Mixing bowls
  • Electric mixer
  • Cake pan
  1. Step 1

    Beat egg yolks on low speed with your electric mixer until they are light and fluffy, approximately 5 minutes.

  2. Step 2

    Slowly beat in the sugar. The batter will turn a pastel yellow once it's thoroughly blended.

  3. Step 3

    Add in the carrots, vanilla and walnuts to the batter. Mix until these ingredients are evenly distributed.

  4. Step 4

    Stir in the matzoh cake mix.

  5. Step 5

    Put the egg whites into a separate bowl and beat until stiff.

  6. Step 6

    Fold a small amount of the egg whites into the batter. Once they're folded together, add the remaining egg whites.

  7. Step 7

    Pour the cake batter into an ungreased cake pan and bake. Once cool, dust the top of the cake with powdered sugar. Use doilies or cut outs to create patterns with the powdered sugar to dress up your cake.

Tips & Warnings
  • Matzoh is readily available at your local grocery store.
  • Make a traditional cake batter by substituting 3 cups flour, 1 cup room temperature butter, 3 tbsp baking powder and 1/2 teaspoon salt for the matzoh cake mix.
