This Mexican pie is an easy recipe that takes just minutes to prepare. It is basically a deep-dish, thick-crust pizza with a Mexican twist. Feel free to alter some ingredients to your personal taste.

Instructions

Things You'll Need:

  • Glass pie pan
  • Low-fat cream cheese (1/2 to 1 package)
  • 1 bag fresh pizza dough
  • 1 bag pre-shredded mozzarella cheese
  • Scallions (1 bunch, rinsed and chopped)
  • Salsa
  • Spoon or dull knife
  1. Step 1

    Stretch out the fresh, uncooked pizza dough into a glass pie pan. Push it up the sides of the glass plate until it stays (the dough will want to spring back at first).

  2. Step 2

    Using the back of a spoon or a dull knife, spread 1/2 to one full package of low-fat cream cheese (depending upon how much you would like) onto the bottom of the pie pan (do not cover the sides).

  3. Step 3

    Place one bunch of scallions, rinsed and chopped, evenly onto the layer of cream cheese.

  4. Step 4

    Sprinkle pre-shredded mozzarella cheese evenly onto the scallion and cream cheese layer.

  5. Step 5

    Place the pie into a 375-degree oven for 15 to 20 minutes or until cheese is fully melted and the crust is just starting to brown (leave in longer if you like a crispier crust).

  6. Step 6

    Take out of oven and let sit 5 minutes.

  7. Step 7

    Cut into pie slices and serve with topped salsa.

Tips & Warnings
  • You may substitute some or all of the mozzarella for a Mexican cheese blend.
  • You can also substitute cooked onions or taco-seasoned hamburger, turkey or chicken for the scallions.
  • You can substitute tomato sauce for salsa.
