Once you make an ice cream sandwich cake, it may become your favorite new item to bring to summer potlucks and backyard picnics. This versatile dessert is layered similarly to a lasagna and can be stacked as high as you dare, or made in a single layer. Once you master the basic technique, experiment with different flavors of ice cream sandwiches, fresh fruit or chopped nuts in whatever combinations your family wants to try. Things You'll Need

  • Platter
  • 8 vanilla ice cream sandwiches
  • 16 oz. aerosol can of whipped cream
  • 16 oz. bottle of caramel sauce
  • 10 oz. toffee candy
  • Plastic bag
  • Rolling pin

Instructions

  1. Caramel Toffee Ice Cream Sandwich Cake

      Place four unwrapped ice cream sandwiches into the center of the platter, laying them snugly side by side.

      Cover the sandwiches with rows of whipped cream sprayed from an aerosol can.

      Drizzle caramel sauce over the whipped cream.

      Place toffee into a plastic bag and seal tightly. Lightly crush the candy into small bits by rolling over it with a rolling pin. Sprinkle crushed candy on top of the caramel sauce.

      Place a second layer of ice cream bars on top of the first, turning them 90 degrees. Top with whipped cream, caramel sauce and toffee candy as before. Repeat with a third layer, again turning the sandwiches 90 degrees to create a checkerboard pattern.

      Freeze for approximately three hours or until the dessert is solid. Cut into 12 servings with a serrated knife.

  • At your child's next sleepover, let the kids make "single serving" ice cream sandwich cakes by setting out an array of sauces and toppings for them to drizzle over their individual sandwiches.
