Difficulty: Moderately Challenging
Things You’ll Need:
- 6 boneless chicken breasts
- Flour
- 3 eggs
- Milk
- Seasoned bread crumbs
- Fresh parmesan cheese
- Grated mozzarella cheese
- Your favorite tomato sauce
- Butter flavored Pam
- Meat mallet
- Large baking sheet
- 9 x 13 cake pan
Step1
First you need to trim up your chicken breast to remove the fat. Once you done this, put the breasts in a large zip lock bag one at a time and pound them flat with the meat mallet. About 1/4" thick. Do this to all of the breasts. Once you have done this, put them to the side.
Step2
Now you will need to prepare your bread crumbs, flour and egg mixture. In a large bowl, mix the bread crumbs and parmesan cheese. In another deep but wide bowl, put the 3 eggs and 1/4 cup milk in and beat together. On a large plat, put 1/2 cup flour and add a pinch of salt and several shakes of black pepper (you can also add some garlic powder for more flavor).
Step3
Now take the breasts one at a time and coat them in the flour and put to the side for just a few minutes. Pre heat your oven to 350 degrees. Spray your large cookie sheet with the butter flavored Pam. Take each breast one at a time and dunk into the egg mixture and coat completely, then coat with the bread crumb mixture. Put on the cookie sheet and leave a little space between them. Now bake in the oven for 20 minutes. Take the pan out and allow the chicken to cool for 30 minutes.
Step4
Once the chicken has cooled, Spray your 9 x 13 pan with a little more of the Pam. Put a small amount of the sauce on the bottom and spread to cover the bottom. Put he chicken breasts in the pan and cover with the sauce in moderation. Now cover the breasts with the mozzarella cheese covering well and put back into the 350 degree oven for 20 more minutes. Take out and allow to cool for ten minutes. Now serve with your favorite pasta. Good luck and good eating.
