Things You'll Need:
- For the salad dressing:
- 1/2 tsp. salt
- 2 Tbsp. sugar
- 1/4 c. salad oil
- 1 Tbsp. snipped parsley
- dash of pepper
- 2 Tbsp. vinegar
- dash of red pepper sauce
- For the salad:
- 1/4 c. almonds, sliced
- 1 Tbsp. plus 1 tsp. sugar
- 1/4 head lettuce
- 1/4 head romaine
- 1 c. celery, chopped
- 2 green onions (with tops), thinly sliced
- 1 (11 oz.) can mandarin oranges, drained

Shake salad dressing ingredients in tightly covered jar; refrigerate.

Cook almonds and sugar over low heat, stirring constantly, until sugar is melted and almonds are coated. Cool and break apart. Store at room temperature.

Now to the actual heart of the salad: Tear lettuce and romaine into bite size pieces (about 4 cups). Place greens in plastic bag; add celery and onion. Fasten bag securely and refrigerate.

Five minutes before serving the salad, pour salad dressing into bag; add oranges. Shake salad until greens and oranges are well coated. Add almonds to the salad and shake. Then serve the mandarin orange salad immediately and enjoy!
