Combining the sweetness of mandarin orange sections with the creamy texture of avocado dressed with a tart vinaigrette creates a dish that hits multiple flavor notes. But, the salad is open to many interpretations.
Combine drained mandarin oranges with thinly sliced red onion. Toss with a vinaigrette dressing made from three parts oil and one part sherry vinegar seasoned with salt and pepper, minced shallot and whatever fresh herbs you enjoy. Refrigerate until you’re ready to serve. When you’re ready to serve the salad, peel, de-seed and slice an avocado. Gently toss the avocado with the dressed mandarin oranges. Serve the salad on a bed of mixed greens.
Add walnuts, pecans or sliced almonds and top with crumbled bacon. Substitute sliced apples or pears for the avocado. Put a Greek twist on the salad by adding ripe olives and feta cheese. Sweeten the dressing with a teaspoon or two of sugar or honey, or use balsamic or other flavored vinegar in place of the sherry vinegar. Add Dijon mustard to the vinaigrette.
