A fish and basil toastie is an easy anytime treat that is a healthy alternative to melts or fried food while still tasting delicious. Take a few simple ingredients and cook them together for a crispy, moist, mouth-watering experience.

Instructions

Things You'll Need:

  • Fish (canned is easier)
  • Bread
  • Butter or margarine
  • Basil
  1. Step 1

Take two pieces of bread and butter them lightly on all sides. Sandwich bread is easiest to prepare and butter, but crusty French or Italian bread makes great panini or gourmet sandwiches. Check that the bread fits into your oven, since some toaster ovens are very small and low.

  2. Step 2

Lay your fish on one side of the bread and coat it evenly. Again, you can use any kind of fish, but the canned variety is easier because it is already cooked and boneless.

  3. Step 3

Chop up your basil finely and sprinkle on top of the fish. Fresh basil tastes best when slightly chilled, so stick it in the refrigerator before using.

  4. Step 4

Place the remaining slice of bread on top of the basil and press down. If you are using French bread, close it tightly so the ingredients don't fall out.

  5. Step 5

Put it in your oven, toaster oven or sandwich press on a medium setting. If you are cooking the fish from scratch, leave it in the oven for at least 10 minutes. Take it out when your bread is slightly browned and crispy. If you are cooking in a toaster oven, crank up the heat for a few seconds so your bread browns.

Tips & Warnings
  • Add tomatoes and cheese on top of the basil to make a gourmet version with extra flavor.
  • Let the toastie stand for a minute before eating since the fish filling will be hot.
