How to Make a Cheese Log

A cheese log makes the perfect party food. Serve it on a large platter surrounded by a variety of crackers and invite your guests to dig in. You might want to make two, because the cheese log will disappear in a hurry.

Instructions

Difficulty: Moderate

Things You’ll Need:

  • Very sharp cheddar cheese, shredded
  • Softened cream cheese
  • Sweet red bell pepper, chopped
  • Finely chopped onion
  • Worcestershire sauce
  • Freshly-squeezed lemon juice
  • Red pepper flakes
  • Salt
  • Chopped pecans
  • Fresh parsley, chopped
Step1
Place the grated cheddar cheese and softened cream cheese in a large mixing bowl and beat on medium speed until the cheeses are well blended.
Step2
Add the sweet red peppers, chopped onion, Worcestershire sauce, lemon juice, red pepper flakes and salt. Mix thoroughly.
Step3
Chill the mixture in the refrigerator for several hours, or overnight.
Step4
Mix the chopped parsley and chopped pecans in a small mixing bowl.
Step5
Remove the cheese mixture from the refrigerator and shape it into a log.
Step6
Roll the cheese log in the parsley and pecan mixture.
Step7
Serve the cheese log with crackers.

Tips & Warnings

  • Other chopped nuts can be substituted for the chopped pecans. Walnuts or almonds are good choices. If you prefer, you can omit the nuts.
  • To add variety to your cheese log, roll one side of the log in chopped dried beef.
  • You can shape the cheese log any way you like, including a ball, a pyramid, or even a football.
