Step 1
Cut the bread into 1-inch thick slices. To make larger pieces, cut the loaf on an angle. French and Italian breads work well but feel free to substitute any rustic bread. However regular sandwich bread tends to become soggy, but you can toast it first if that's the only kind of bread you have on hand.

Prepare the pizza sauce from a recipe or use a canned sauce. Spread a small amount over each slice of bread, taking care not to push it down into the bread.

Apply your choice of toppings, starting with the cheese (if you’re using any) and putting the other toppings on top.

Turn on the broiler in your oven. Place the bread pizzas on a baking sheet and put in the oven until the cheese is melted and bubbly. A rack in the middle of your oven is close enough to the broiler to melt the cheese and heat the toppings. Keep an eye on the pizzas; depending upon the heat from your broiler, they may be ready in 3 to 5 minutes.

Step 5
Slice long loaves of French bread in half, lengthwise, as an alternative to individual slices. After baking, slice into serving-size pieces.
