Homemade egg noodles can taste so much better than any packaged brands. You can combine all of your ingredients and form the noodles by hand, but you'll speed the preparation by using a food processor.

Difficulty: Easy
Instructions

Things You'll Need:

  1. Step 1

Put 2 cups of white or wheat flour into the food processor and a teaspoon of salt.

  2. Step 2

Turn the food processor on to a low setting. Carefully add 3 egg yolks, a tablespoon of olive oil and 3 tbsp. water. Allow the food processor to mix the dough until the texture is smooth enough to make a ball.

  3. Step 3

Knead the dough into a ball, and then place it in a clean dish towel. Let it rest on a work surface at room temperature for 5 to 30 minutes. This will allow the dough to set so that it doesn't tear while you work with it.

  4. Step 4

Divide the dough into 4 or more smaller balls. Flatten the dough with a rolling pin, lengthwise away from you. Roll until the dough attains your desired thickness. Repeat the process for the other balls, making sure that the dough forms a rectangular shape when you flatten it. Lightly sprinkle flour onto the dough so that it doesn't stick.

  5. Step 5

Slice the dough into 1/4-inch egg noodles with a knife, a pizza cutter or a pasta machine. Since pasta machines vary, follow the manufacturer's instructions to get the right thickness and consistency for your noodles. Dry the pasta and cook it immediately. If you want to save the pasta for later, store it in a container in a cool, dry area of your kitchen.
