Make some swiss steak in your oven or your crock pot, and your mouth will water with the smells of the wine and spices as they permeate the steak. The inclusion of tomatoes, celery and carrots makes this a satisfying and hearty meal.

Instructions

Difficulty: Moderate

Things You’ll Need:

  • Round steak, cut about ¾ inch thick
  • All-purpose flour
  • Dry mustard
  • Salt
  • Freshly ground black pepper
  • Garlic powder
  • Shortening
  • Canned tomatoes, undrained
  • Celery stalk, sliced
  • Medium onion, sliced
  • Sliced carrots
  • Red wine
  • Worcestershire sauce
  • Water

Step1
Cut the round steak into six equal pieces.

Step2
Mix the flour, dry mustard, salt, pepper and garlic powder in a small bowl and pound a couple of teaspoons of the mixture into the steak.
Step3
Heat the shortening in a large, heavy skillet or dutch oven and brown the meat on both sides.

Step4
Drain the fat from the steak and add the tomatoes, celery, onion, carrot, wine and Worcestershire sauce.
Step5
Cover the pan and simmer the swiss steak until the meat is tender, about 1¼ hours.

Step6
Remove the steak from the dutch oven, place it on a platter, and keep it warm while you finish making the sauce.
Step7
Mix the remaining flour with about a quarter cup of water and add it to the ingredients in the dutch oven, stirring until the mixture thickens. Pour the sauce over the swiss steak, or serve it separately.
