Egg salad is a classic lunch dish. Put it on a sandwich, pita, crackers, or eat it straight from the dish!

Difficulty: Easy
Instructions

Things You'll Need:

  • Eggs
  • Mayonnaise
  • Mustard
  • Sweet Pickle Juice
  1. Step 1

Boil the eggs (3 eggs is about enough for two sandwiches).

  2. Step 2

Peel the eggs and chop into pieces.

  3. Step 3

Mix in about 1/3 to 1/2 cup of mayo for every 3 eggs (This is where I follow in my grandmother's footsteps...just add enough until it looks right!)

  4. Step 4

Add appx (again, eyeball it) 1/2 tsp mustard for every three eggs.

  5. Step 5

Here is the secret--add about a 1/2 a tsp of sweet pickle juice for every three eggs.

  6. Step 6

Mix together (I use a fork, my mother uses a pastry blender, and my sister uses a food processor).

  7. Step 7

    Enjoy!

Tips & Warnings
  • Try adding some shredded cheddar cheese before you mix it together for a tasty variation!
  • My favorite way to eat egg salad is in a toasted pita pocket. Yum!

on 9/17/2008 Sounds delicious. Which type of mustard do you usually use? I prefer Dijon Mustard over yellow. It adds a different flavor and a little spiciness.
