Step 1
Place the cereal in a large mixing bowl and set it aside.

Butter a large baking sheet.

Bring the granulated sugar and light corn syrup to a boil in a heavy saucepan over medium heat. Stir it constantly until the sugar is completely dissolved and bubbles are just beginning to form on the edges of the mixture. Be careful not to overheat, because the mixture can burn easily.

Remove the mixture from the burner and stir in the peanut butter, chocolate chips and vanilla extract, stirring just until the chocolate chips are melted.

Quickly pour the mixture over the cereal and stir it enough to coat the cereal with peanut butter and chocolate, stirring gently enough that the cereal isn't crushed.

Spread the mixture in the buttered baking sheet and let it set up for about 30 minutes.

Cut the peanut butter crisps into squares and serve, or store them in a sealed container.
